
Cherry Cheesecake
2-(8 oz.) plus 1-(3 oz.) packages of cream cheese, softened
1 cup sugar
2 teaspoons lemon juice or grated lemon peel
1\4 teaspoon vanilla
3 eggs
1 can cherry pie filling
1 ready made graham cracker pie crust
Heat oven to 300°‚beat cream cheese in large
mixer bowl. Gradually add 1-cup sugar, beating
until fluffy. Add lemon juice and vanilla. Beat
in eggs, one at a time. Pour in graham cracker
pie crust.
Bake 1 hour or until center is firm. Cool to room
temperature. Pour cherry pie filling over top.
Chill at least 3 hours.
Yield: 12 servings
